Spring Break Pho was conceptualized one faithful morning on November 4, 2007. Norvelle and Estella were hungrily planning what to eat for Sunday brunch. At this point, Norvelle, Estella, and Greg had all been working and living in Oakland for over a year since graduating from college.
UPDATE! The original transcript have been recovered a dusty harddrive, buried under ancient rocks, stones, and bytes. I share it with you here:

Estella (12:36:32 PM): i’ve hella been craving it

Estella (12:38:14 PM): poo, change all the clocks, sit and check my email, upload videos, d/l songs, wash my car, feed the cat, oh wait i dont have a cat, go get a cat, feed the cat, drink milk, poo cuz i drank milk, wash the inside of the oven, mop the floor, brush my teeth, take a nap, water the plants, go to work tomorrow morning, do my work, come back from work, eat with my grandma for dinner (possibly some pho), come back, shower, poo, drink some tea, sleep, go to work, come back from work, and then check my email?

They looked up UC Davis’ academic calandar to “find out when Greg would be off for spring break” and set Saturday, March 22, 2008 as the first Spring Break Pho.
From the months of November until March, Norvelle and Estella swore pho-celibacy and refused any temptations, invitations, and bribes to partake in any pho events. There were no pho+taco truck runs, nor was any time saved one bit. After much self-restraint and discipline, the sweet taste of March broth was ever so rewarding.
