At this point in time you may be wondering to yourself, “what the hell is Spring Break Pho?” Don’t worry you’re probably not alone in thinking this. Quite simply, Spring Break Pho (SBP) is a culmination of two things that are indisputably amazing – Spring Break and Pho.

Now I bet you’re wondering how exactly we came up with this oh so clever and 100% applicable name? Similar to most works of art, it took a long journey filled with various trials and tribulations to find the perfect title for one of the most joyous events in the universe.

When Estella and I originally decided to delay our Pho consumption until Spring Break and make an official event out of it, we were completely stumped on naming the gathering.

Obvious names like “It’s Pho Time,” “Pho: you and me,” and “1^st Annual Mid-March Pho Eating Gathering in the Bay Area Hosted By Norvelle, Estella and Greg (Which One????) Attended By Greg, (Which One??? Seriously Which One?) Jeremiah, Eugenia, Liz, Brent and That One Other Person That’s Slipping My Mind Right Now I Think It Was Jess?” were thrown out there, but they just didn’t have that zip, zing, pizzazz, attention-grabbing dazzle that we were looking for.

We continued to rack our brains, summoning up every last bit of creativity until finally by the inspiration of Muse himself… Errr herself… themselves?… we decided on the gloriously complex and mystical choice of Spring Break Pho. I’ve got to admit we were, and still are today, pretty smug with the ingeniously applicable name.

Now, if only we knew who to attribute this stroke of genius to…
